On the Farm...

Preparations are under-way for Thanksgiving at the farm. We like to clean and organize before everyone arrives, and bake, bake, bake! I can't seem to stick with the planned menu...I just keep adding more. With all the children helping, we seem to want to try just about every delectible recipe out there. Our first responsibility is to make the traditional Pecan Pie to honor my momma's southern heritage, Pumpkin Fudge to bless my brother-in-law, and someone else has volunteered to make the Apple Pie, Cranberry Tart and Pumpkin Pie. Who knows? Maybe we'll think of something else!



In addition to the turkey, we will bake a delicious ham~children-loved and farm-fresh from the summer. Now that is a reward...knowing our meat came from the farm.

If anyone is looking to try a new sweet potato recipe this year, I humbly submit our third-generation recipe as, well, the best. Besides, marshmallows in my potatoes make me nervous...

Sweet Potato Casserole
3 c. mashed sweet potatoes (bake your own~approximately one large potato =one cup)
1/2 c. brown sugar*
1/2 c. white sugar*
1 c. milk
1/2 c. butter
1/2 t. salt
1/2 t. vanilla
2 eggs
2 c. corn flakes (crush after measuring)
1/2 c. chopped pecans (optional)
Add milk, sugars, butter, salt, vanilla, eggs and 1/2 of the crushed corn flakes to the mashed potatoes. (We add the butter to the warm potatoes to easily soften/melt it) Mix well on high. Put in large, greased casserole. Sprinkle with remaining cornflakes and pecans. Bake 15 minutes if warm or 30 minutes if cold at 375.
*The sugars can be reduced some, based on personal preference

It must be nice to have meat from your own farm, but I can garantee you, the pig will not feel very thankful this year! :)

Pumpkin fudge??? Never heard of it. Mind sharing the recipe on here? We are going to Terri's on Thanksgiving and can't wait. I hope your back is doing better.

I have never tried pumpkin fudge...It must be delicious!

My favoriate recipe to be eaten with turkey is a rice dish we make in South America called - coconut rice with raisins.

This dish has been a staple in my family's menu during the holidays.

Unfortunately, due to dietary restrictions...I can't not make it this year, but I will miss it ;-)

Hello Mrs Regan,
This is Kelsey's Mom again.
I am warmed by your telling of your preparations, recipes,(my husband tells me I would make a great southener because I love pies and baking!)and your love for baking! I do the SAME thing! I plan my menu and it just grows each day! It is so funny to hear someone else say they do the same thing as I do.
We do have so much to be thankful for and what great memories we make with our family gatherings and yearly traditions we share, unique to us. For instance, our family takes time each Thansgiving talking about what we are thankful for aeound the table. This takes place in a variety of ways with a variety of personalities. :) The children will read and/or write a poem, or a scripture, story, or whatever they decide, to give thanks in a way of their own choosing.
What a blessing to share these precious times and we need to really cherish them. I hope our children will get the privilege to carry on in similar ways. The days certainly are changing and it is sometimes hard to know what their future holds in this regard. I thank God for people like yourselves, and others like you, who take seriously and joyously these special and memorable times and use then to the fullest.
